1 rotisserie chicken (remove meat from bone and make into bite size pieces)
1 16 oz. can black beans
1 16 oz. can stewed tomatoes
1 bag frozen corn
6 cups chicken broth
1 small white onion, chooped
1/2 tsp chili powder
2 tsp salt
3 Tbsp butter
1 cup shredded cheese (Cheddar, Jack or Monterey)
Corn tortilla chips (for garnish)
Cilantro (for garnish)
In large stock pot, melt butter and simmer onion for about five minutes. Add stewed tomatoes, stir and simmer another five minutes. Add chicken broth, chicken, black beans, corn , chili powder and salt and heat to boil. Reduce heat to simmer. Add cheese, stir until melted and mixed in.
Serve soup in a bowl and garnish it with crushed tortilla chips, shredded cheese and a little cilantro.
