Twice Baked Potatoes

4 large, brown russett potatoes
¼ cup butter or margarine
½ cup of milk
2 cloves of garlic
¼ cup chopped chives
2 tsps of salt

Bake potatoes in oven for about 45 minutes on 450° or until soft. Remove potatoes, cut open on top and remove all the potatoes contents with a spoon and place in bowl. Save the potato skin and try to keep in intact. Take contents of all four potatoes and mix in bowl with butter, milk, garlic, chives and salt until well blended and has consistency of mashed potatoes. Refill the potatoe skins with the mixture, and place in oven on a baking sheet for another 15 minutes, or until top layer of potato browns and crisps.

Additions: cheese may be added to the top of the potatoes before putting them back in the oven for final 15 minutes.
Note: Season mashed potatoe mix to taste before refilling potatoes.

Serves: 4
Start to finish: 1 to 1 ½ hours, depending on cook time of potatoes
