Fajitas
4-6 chicken breasts (cooked, browned and sliced into strips)
1 each orange, red and yellow bell peppers (cut into strips and sauté in olive oil until soft
1 16-20 oz. jar of black bean and corn salsa
8-12 flour tortillas, burrito size
Add cooked chicken strips, sautéed bell peppers and all but ½ cup of salsa to pan and simmer on medium until hot.
Salsa
1 mango, cubed
1 small can of pineapple chunks (drain juice and save, cut pineapple chunks into smaller pieces)
½ cup of black bean and corn salsa
¼ cup chopped chives
Add mango, pineapple chunks, pineapple juice, salsa and chives together.
Serves: 4-6
