This fantastic recipe comes from Maggianos Italian restaurant. While they originally called it the Cucumber Collins (because their recipe calls for Gin), I chose to use cucumber vodka in my version because I'm not much of a fan of gin. The great thing about this recipe is the use of fresh, homemade sour. Most sour mixes available at the store contain high fructose corn syrup, whereas the homemade version uses simple syrup using pure cane sugar. Enjoy!
3 cucumber slices, diced
1.5 oz. cucumber vodka, vodka or gin
2 oz. fresh sour mix
Fresh Sour:
1 part lemon
1 part lime
1 part water
2 parts simple syrup (1 part water, 1 part sugar boiled until sugar dissolved, cooled)
Instructions:
Muddle cucumber in shaker
Shake with ice and strain into glass
Garnish with cucumber slice
Serves: 1
