Dorito and Chicken Casserole

1 lb. boneless, skinless chicken breasts or tenders, cooked and cut into 1" pieces
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Rotel (diced tomatoes and mild green chilies)
1 pint sour cream
2 cups shredded cheddar, Monterey Jack or Colby cheese
1 bag Doritos, original flavor, divided

Heat oven to 350 degrees.

Mix chicken, both soups, Rotel and sour cream in a large bowl. Coat large baking dish with cooking spray. Either crush 1/2 bag of chips and combine with chicken mixture, or layer chips, then mixture, in baking dish. Sprinkle cheese on top. Bake in oven for 30-40 minutes, or until cheese is browned and bubbly. Serve with remaining Doritos.
