(Puerto Rican Corned Beef)
One of my roommates in New York made me Carne Bif this past week and I absolutely loved it. So much so, I came home and made it myself the next night. It's easy and inexpensive, and the ingredients are readily available at most grocery stores. Look in the Spanish foods section. Goya makes all the items needed.
2 T Olive oil
½ C sofrito
¼ C alcaparrado
1 sm. can tomato sauce
¼ C water
1 can corned beef
Salt and pepper to taste
Cook sofrito in olive oil over medium heat. Add alcaparrado, tomato sauce and water. Simmer for about five minutes. Add beef, salt and pepper. This should be watery - may add more water if needed. Serve over white rice with fried amarillos (yellow plantains) and a salad.
To make the fried plantains, slice the plantains and pan fry with a tablespoon of vegetable oil until browned. One plantain should be enough for two people.
