1 T pine nuts, toasted
2 oz. Goat cheese
1 T fresh herbs such as basil, thyme, chives or
parsley, chopped
Salt and pepper, to taste
2 boneless, skinless chicken breasts
Toothpicks
1 T olive oil
In a small bowl, combine the pine nuts , goat cheese, herbs and salt and pepper. Using a sharp, thin knife, make a 3-inch deep slit along the thickest and longest side of the chicken breasts. Stuff each breast with half of the cheese mixture. Season the meat with salt and pepper and close pockets with toothpicks. In a medium sauté pan, heat the oil over medium heat. Add the chicken breasts and cook for 5 to 6 minutes . Flip breasts and cook until done, about 5 to 6 more minutes more.
